I've really been trying to fill my freezer with foods so that we have some healthier options for breakfast, and grab and go foods. So, the other day I made 30 breakfast tacos, 1/2 bacon and 1/2 sausage. It was really quite easy, and while it isn't the healthiest option on the planet (because of the white flour tortilla), it is definitely better than a store bought breakfast cereal, or donuts or something like that... So, I feel pretty good about this compromise. :)
Breakfast Tacos
Ingredients:
30 Flour Tortillas (the thin ones about 7 inches in diameter - not the big huge ones)
18 eggs
1 pound breakfast sausage
1 pound bacon
cheddar cheese, shredded
salsa
cornstarch
Instructions:
Scramble up the eggs with salt and pepper to taste, set aside. Brown the sausage, and cook the bacon (separately) and set aside.
Get a large cookie sheet (or two) ready.
Mix up a small dish with water and corn starch to a consistency a little more liquidy than glue. Sorry, that's the best description I can give you, when you do it you'll know what I'm talking about.. Too runny add cornstarch, too thick add water....
Here we go:
In the center of a tortilla place a small amount of egg, then either sausage or bacon, sprinkle with cheese, add about 2 TBS of salsa. Roll up, ensuring the ends are securely tucked in. When you have it rolled up, place a small amount of the cornstarch solution on the end of the tortilla on the inside to "glue" it together. Place tortilla "glued side down" to solidify the hold. Do this with all of your tacos and place them on cookie sheet.
Place the cookie sheet in the freezer for about 2 hours until the breakfast tacos are pretty hard. Then transfer to ziplock bags to store in freezer until you're ready to eat.
When you want to eat, I heated 2 at a time up for 45 seconds, then turned them over and heated an additional 30 seconds. Yum :)
